Recipe: Spiced Chicken with Almond-Mushroom Sauce
Ingredients:
For the Spice Rub:
- 1 dried whole chili (seeds removed for a milder heat)
- 1 small cinnamon stick
- 3 whole cloves
- 1/4 teaspoon freshly grated nutmeg
- 1 star anise
- 3 cardamom pods (discard the outer shell after grinding)
- Salt, to taste
For the Chicken & Sauce:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 cup dried mushrooms (rehydrated in warm water for 20 minutes, then drained and chopped)
- 1/2 cup almonds (lightly toasted and roughly chopped)
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon honey
- Fresh cilantro or parsley for garnish
Instructions:
- Grind the Spices: Place the dried whole chili, cinnamon stick, cloves, star anise, and cardamom pods in the Grater Pod. Grind them finely to create a fragrant spice mix. Combine this with the freshly grated nutmeg and a pinch of salt.
- Prepare the Chicken: Rub the chicken breasts with half of your freshly ground spice blend. Let the chicken marinate for at least 30 minutes to absorb the flavors.
- Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until translucent, then add garlic and continue cooking for another minute until fragrant.
- Cook the Chicken: Add the marinated chicken to the skillet and sear on both sides until golden brown. Remove the chicken and set aside.
- Build the Sauce: In the same skillet, add the rehydrated, chopped mushrooms and toasted almonds. Stir in the remaining spice blend and drizzle with honey. Pour in the chicken broth, stirring well to combine all the flavors. Allow the sauce to simmer for about 5 minutes.
- Finish Cooking: Return the chicken to the skillet and spoon some sauce over the top. Let it simmer gently for an additional 10 minutes, ensuring the chicken is fully cooked and infused with the spice and nutty notes.
- Serve: Plate the chicken with a generous helping of the almond-mushroom sauce. Garnish with fresh cilantro or parsley. Enjoy with a side of steamed rice or crusty bread to soak up the delightful flavors.
