Spice Cake Cookies

Ingredients: (Yields 12 Cookies)

Cookie Dough:
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 4 Tbsp. unsalted butter, cut into small pieces
  • 1 large egg
  • 2 ¾ cups all-purpose flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. Pink Himalayan FinaSpice Salt (PRO Plus pod)
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground allspice (MAX pod)
  • 1/4 tsp. ground ginger (PRO Plus pod)
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
Glaze:
  • 1 cup. powdered sugar
  • 2 Tbsp. milk
  • 1 tsp. vanilla extract

Directions

1. In a large skillet with high sides or large pot, add honey and brown sugar. Cook over medium heat, stirring frequently, until sugar dissolves.

2. Remove pan from the heat, then whisk in the butter until the butter melts.

3. Whisk in the baking soda, salt, spices, and egg.

4. Stir in the flour. Mix until the dough is soft and slightly sticky. Spray your hands with nonstick cooking spray and gather the dough into a ball. Allow to rest for 30 minutes in refrigerator.

5. Preheat oven to 350F.

6. Place ½ the dough on a piece of parchment paper. Place a piece of parchment paper on top of the dough. Roll the dough to ¼ inch thickness. Using cookie cutter of your choice, cut out cookies. Space the cookies out on a parchment paper lined baking sheet. Repeat with remaining dough and re-roll the scraps of dough.

7. Bake in oven for 12 minutes. Allow to cool a few minutes on the baking sheet, then transfer to a wire cooling rack.

8. Make the glaze. In a medium bowl, whisk together all ingredients for glaze. Spread glaze over warm cookies and enjoy!
